Well, not just any box, an old time favorite friend of mine, drum roll please, Ms. Betty Crocker! Not just any little brother either, Reid Montgomery Barry, the youngest of my seven stupendous brothers and sisters! The whole Barry clan is up in Stratton, Vermont skiing for the Christmas holidays. While I would love to whip up some delectable treats made from scratch, sadly that is not going to happen in our tiny kitchen furnished with solely the basics-spoon, fork and a mixing bowl required for this recipe.
So, eldest sister and youngest brother decide to embark on a baking adventure with Ms. Betty Crocker as our expert guide. All the ingrediants we needed was a box of Fun da-Middles Chocolate Cupcake Mix with Creamy Vanilla Filling, 2 eggs, vegetable oil, a cupcake tin that fits 12 cupcakes, and cupcake liners (I used a disposable tin). Mix the two eggs and vegetable oil together and then add the chocolaty flour mixture provided in the box. Continue to mix the batter until no lumps remain. Fill the cupcake tins halfway full with the chocolate mixture. Please note, the mixture is a little thicker than normal cupcake batter, so do not freak out if this happens. Then squeeze out the vanilla frosting into the center of cupcake tins. For the final touch, cover the vanilla frosting with the remaining chocolate batter. Gorgeously simple!
These cupcakes are extremely easy for kids to make. Most importantly, they hardly make a mess and are so easy to clean up. Overall, including the 30 minutes oven baking time, it takes about 45 minutes for the entire baking process.
The end result? The cupcakes are moist and light and not too chocolaty, so my other brother Quinn, who hates chocolate, loves them. The vanilla filling tastes more like marshmallow fluff, but it is still delicious. According to Ms. Betty Crocker, the cupcakes will keep at room temp for up to 4 days, loosely covered. Cupcakes will keep up to 7 days in the fridge if they are covered. If you have extras, you can freeze the cupcakes for up to 2 months. To thaw cupcakes, loosen the wrap and let it stand at room temp for 2 to 3 hours.
I would definitely recommend making these Fun da-middles with family and friends. I would make them again just to see little Reid devour them!
